Why not create a Field Dependency between Lead source as the Controlling Field (which allows you to pick first the source of the lead) which automatically provides you with the relevant product categories only?

I understand that Lead Source being a standard obj can't be the Dependent field (and so it wouldn't work the other way around) but nowhere does it say it can't be the Controlling Field.
